Empanada Chips with Homemade Queso and Guacamole

Empanada Chips

Cook Time: 25 mins

Total Time: 60 mins

Ingredients:

6 beef empanadas

 

Instructions:

  1. Allow empanadas to thaw slightly on the counter for about 30 minutes. Empanadas should still be firm but should have enough softness to slice with a knife.
  2. Using a sharp knife, slice empanadas into 8-10 pieces each. It is all right if some of the pieces are not perfect. They will still make nice, crispy chips.
  3. Air fry the empanada chips in two batches at 390 ˚F. For each batch, arrange the empanada slices in a single layer as much as possible. There may be some overlap depending on the size of the air fryer. For a single layer, air fry for 10-11 minutes. For a double layer, air fry for 13-14 minutes.
  4. Place in a bowl and keep aside until ready to serve. 

 

Guacamole

Ingredients:

2 avocados

¼ cup white or yellow onion, diced

1 jalapeño, diced

1 Roma tomato, diced

⅓ cup cilantro, finely chopped

Juice of 1 lime

1 tsp salt

Instructions:

  1. Dice onion, jalapeño, tomato. Chop cilantro. Juice lime.
  2. Add avocado flesh to a medium bowl and mash until smooth.
  3. Add remaining ingredients and mash to combine.
  4. Stir vigorously for an extra 30 seconds for a smooth, whipped texture.

 

Queso

Logistics:

Prep Time: 10 mins

Cook Time: 10 mins

Total Time: 20 mins

Serves: 6

 

Ingredients:

2 tbsp salted butter

¼ cup white or yellow onion, diced

1 clove garlic, minced

4 oz Oaxaca cheese, cut into smaller pieces

4 oz White American cheese, cut into smaller pieces

¼ cup milk

½ tsp ground cumin

½ tsp chili powder

4 oz fire roasted diced green chilis

1 Roma tomato, diced

Optional garnishes: chopped cilantro, diced tomato, diced red onion

Instructions:

  1. Dice onion and tomato. Mince garlic.
  2. Heat butter in a small pot over medium heat.
  3. Add onion and garlic. Cook for 3-5 minutes or until softened, stirring occasionally to prevent burning.
  4. Add milk and cheese. Reduce heat to low and stir until all the cheese melts and forms a uniform consistency. If you prefer a thinner queso, stir in more milk (1-2 tbsp at a time) to reach the desired consistency.
  5. Add cumin, chili powder, diced green chilis, and tomato. Stir to combine.
  6. Top with desired garnishes and serve immediately along with the empanada chips and guacamole.

Notes:

  1. Cheese: For the best results, do not use pre-shredded cheese. The added anti-coagulation agents in shredded cheese will prevent the queso from keeping a smooth, melty texture. White American cheese can be purchased from the deli counter at your local grocery store.
  2. Reheating: If the queso needs to be reheated, add 1-2 tbsp of milk and microwave for 30 second intervals, stirring between each, until the queso reaches the desired consistency. Queso can also be kept in a small crockpot to serve warm.
