  • 1 tbsp olive oil  
  • ¼ medium onion, diced  
  • 2 jalapeños, diced (for less heat, remove seeds and pith)  
  • 2 roma tomatoes, diced  
  • 1 cup corn kernels (frozen or canned)  
  • 2 medium zucchinis, sliced into half moons  
  • 4 cloves garlic, minced  
  • ½ tsp ground cumin  
  • ½ tsp oregano  
  • ¾ tsp salt  
  • ¼ tsp black pepper 
  • ½ cup shredded melting cheese (Chihuahua, Oaxaca, or mozzarella all work great)  

 Optional toppings: crumbled cotija cheese and chopped cilantro.


  • In a large skillet, heat olive oil over medium heat. 
  • Add onion and jalapeño. Sauté for about 5 minutes, or until the onions become translucent and the peppers start to soften. 
  • Add tomato and corn. Mix and cook for about 2 minutes, stirring occasionally. 
  • Add zucchini, garlic, cumin, oregano, salt, and pepper. Mix well. 
  • Add ¼ cup of water to the skillet, cover, reduce the heat to low, and simmer for 8 minutes, or until the zucchini is cooked. 
  • Remove the skillet from the heat, add melting cheese, and cover for a couple of minutes until the cheese melts. 
  • Garnish with cotija and cilantro. Serve immediately.
